Chocolate and date flapjack

Gluten free chocolate flapjack made with oats, dates, and dark chocolate. Soft in the middle, slightly crisp on the edges, and topped with melted chocolate and freeze dried raspberries. Easy to make, no refined sugar, and designed to support steady energy without the usual crashes.

Ingredients

Makes 9 bites

  • 8 medjool dates (pitted)
    2 tbsp hot water
    30g gluten free oats
    20g ground GF oats
    1 tbsp chia seeds
    15g ground almonds
    15g chopped nuts
    3 tbsp pumpkin + sunflower seeds
    1 tbsp cacao powder
    2 tbsp odourless coconut oil
    1 tbsp cashew or almond butter
    ½ tsp sea salt
    1 tsp ground cinnamon

Method

  1. Line a cupcake tin with strips of parchment paper (leave overhang to lift out easily)

  2. Soften dates with hot water, coconut oil + nut butter in a saucepan on a low heat. Stir until combined into a paste. Remove from the heat.

  3. Mix in oats, ground oats, chia seeds, ground almonds, nuts, seeds, cocoa, salt + cinnamon

  4. Divide mixture into 9 balls and place into the lined cupcake tin and flatten each one firmly

  5. Bake at 150°C fan for 10 minutes

  6. Remove from oven, place a square of dark chocolate on each one and gently press into the mixture

  7. Return to the oven for 1–2 minutes to melt

  8. Remove, top with freeze-dried raspberries

  9. Chill until set, then lift out using the parchment and serve

    Freezing

    Great for batch prep
    Texture becomes slightly firmer/chewier
    Eat straight from freezer (like a cold chocolate bite)
    or leave 10 mins to soften
