Tuna stuffed sweet potato (GF + DF)

Ingredients

serves 1

  • 1 sweet potato

  • 1 tin of tuna, drained

  • 1 tbsp dairy free yoghurt

  • 1 tbsp lemon juice

  • sea salt and black pepper to season

  • broccoli sprouts (optional)


Method

Prick your potato all over with a fork and place onto a baking tray

Bake FAN 180 for 50-60 minutes or until soft inside when pierced with a fork

Mix together the tuna, yoghurt, lemon juice and season with sea salt and black pepper

Add the potato to your plate once cooked and slice open

Top the potato with the tuna and sprinkle over some broccoli sprouts

Serve with a side salad - I've served mine with watercress and tomato
