Ingredients

Makes -

  • 2 x overripe bananas, mashed

  • 45g coconut oil, melted

  • 30g cashew nut butter

  • 40g honey

  • 1 tsp vanilla extract

  • 120g gluten free oats

  • 60g ground almonds

  • 1 tbsp ground flaxseed

  • 1/2 tsp ground cinnamon

  • pinch sea salt

  • 8-10 dates (stone removed), finely chopped

  • 60g dark chocolate 85%, melted (thin drizzle on the top)


Method

Preheat the oven to FAN 170. Line a 20 x 20 cm baking tin with parchment, leaving overhang for easy removal.

In a large mixing bowl, mash the banana. Stir in coconut oil, cashew nut butter, honey, and vanilla extract until well combined.

Add the oats, ground almonds, ground flaxseed, cinnamon and sea salt. Mix until a thick even mixture forms. Then fold in the chopped dates.

Rest for 10 minutes to allow the flaxseed and oats to absorb the moisture. This step is crucial for a chewy slice.

Transfer the mixture to the prepared tin. Press down firmly and evenly using the back of a spoon.

Bake for 20 minutes, until lightly golden at the edges and just set in the middle.

Cool completely in the tin.

Spread a thin layer of melted chocolate over the cooled base, chill briefly to set and then cut. Finish with a light sprinkle of sea salt flakes.

  • Store in an airtight container for 3-4 days
