Ingredients

Makes 8 bites

  • 100g 70% dark chocolate

  • 4 large Medjool dates, halved (8 halves)

  • 8 teaspoons cashew nut butter

  • 1 small handful frozen raspberries, lightly crushed
    or 8 whole cashew nuts


Method

  1. Line a small baking tray with parchment paper.

  2. Melt the dark chocolate gently in a heatproof bowl over simmering water.

  3. Spoon 8 small dollops of melted chocolate onto the parchment paper.

  4. Place half a date onto each chocolate blob.

  5. Add 1 teaspoon of cashew nut butter on top of each date.

  6. Sprinkle crushed frozen raspberries on top (or press a whole cashew nut into the nut butter).

  7. Spoon the remaining melted chocolate over each bite to cover.

  8. Place the tray in the freezer for 30–45 minutes until firm.

  9. Once set, peel away from the parchment paper — they remove easily when fully frozen.

    Storage

    • Store in an airtight container in the freezer for up to 3 months.

    • Best eaten straight from the freezer or after 2–3 minutes at room temperature.

    • Do not store at room temperature as they soften quickly.
