Ingredients (1 serving)

  • 2 tbsp chia seeds

  • 1 tbsp ground flaxseed

  • 150g coconut milk kefir

  • ½ tsp vanilla extract

  • pinch of ground cinnamon

  • 1 banana (sliced)

  • 1 passion fruit

Method

  1. In a bowl or jar, add the chia seeds and ground flaxseed.

  2. Stir in the coconut kefir, vanilla extract and cinnamon.

  3. Mix thoroughly for 30–60 seconds until evenly combined.

  4. Leave for 5 minutes, then stir again to prevent clumping.

  5. Cover and refrigerate for at least 2 hours, ideally overnight.

  6. Stir before serving.

  7. Top with banana slices and passion fruit pulp

Batch Making & Storage

You can easily make 3–4 portions at once and store them in sealed glass jars in the fridge. They’ll keep well for up to 4 days.
