Feel Good Speedy Soup
Ingredients
Serves 1-2
1 red onion, thinly sliced into half moons
2 garlic cloves, grated
1 thumb-sized piece fresh ginger, grated
1 tbsp extra virgin olive oil
1 tsp turmeric powder
165g raw prawns
500ml chicken bone broth
2–3 large handfuls fresh spinach
2 slices fresh lime
1 tbsp fresh mint, chopped
Pinch chilli flakes
Optional additions:
Cooked rice noodles
Butter beans (for extra fibre and plant-based carbohydrates)
Method
Heat the olive oil in a saucepan over medium heat.
Add the sliced red onion, garlic and ginger. Sauté for 3–4 minutes until softened and fragrant.
Stir in the turmeric powder.
Add the raw prawns and cook until they turn pink and opaque (about 2–3 minutes).
Pour in the bone broth and bring to a gentle simmer.
Add the spinach and allow it to wilt for 1–2 minutes.
Serve immediately, topped with fresh mint, lime slices and a sprinkle of chilli flakes.
Add rice noodles or butter beans if you’d like a more substantial meal.
