Creamy mackerel & bean anti-inflammatory bowl


Ingredients

serves 1

Mix together

  • 1 tin mackerel (drained)

  • 2 tbsp dairy free probiotic yoghurt

  • 1-2 tsp horseradish sauce

  • squeeze of lemon juice

  • fresh chives or spring onion, chopped

Add to a bowl

  • 80-100g black beans (jar or tin), rinsed and drained

  • handful of rocket

  • handful of cherry tomatoes, chopped

To finish

  • sprinkle with broccoli sprouts

  • drizzle with olive oil


Method

  1. In a bowl, combine the drained tinned mackerel, dairy free yoghurt, horseradish sauce, lemon juice and chopped chives. Mix gently until combined.

  2. Add the drained black beans, rocket and chopped tomatoes to a bowl or plate.

  3. Spoon the creamy mackerel mixture to the bowl or plate. Top with broccoli sprouts and drizzle with olive oil.

Ready in 5 minutes - simple, anti-inflammatory nourishment.
