Creamy mackerel & bean anti-inflammatory bowl
Ingredients
serves 1
Mix together
1 tin mackerel (drained)
2 tbsp dairy free probiotic yoghurt
1-2 tsp horseradish sauce
squeeze of lemon juice
fresh chives or spring onion, chopped
Add to a bowl
80-100g black beans (jar or tin), rinsed and drained
handful of rocket
handful of cherry tomatoes, chopped
To finish
sprinkle with broccoli sprouts
drizzle with olive oil
Method
In a bowl, combine the drained tinned mackerel, dairy free yoghurt, horseradish sauce, lemon juice and chopped chives. Mix gently until combined.
Add the drained black beans, rocket and chopped tomatoes to a bowl or plate.
Spoon the creamy mackerel mixture to the bowl or plate. Top with broccoli sprouts and drizzle with olive oil.
Ready in 5 minutes - simple, anti-inflammatory nourishment.
